Mango Nut Bread
Dessert

Ingredients:

  • 2 Cups All-Purpose Flour
  • 1-1/2 Cups Sugar
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon ground Cinnamon
  • 3 Eggs
  • 1/2 C. Vegetable Oil
  • 1 Teaspoon Vanilla Extract
  • 2 Cups Chopped Mangos
  • 1/2 C. Chopped Dates
  • 1/2 C. Chopped Walnuts or Macadamia Nuts

Instructions:

  1. In a large bowl, combine the first five ingredients.
  2. In another bowl, beat eggs, oil, and vanilla.
  3. Stir into dry ingredients, just until moistened. Fold in mangoes, dates, and nuts (batter will be stiff).
  4. Spoon into two greased 8-in x 4-in x 2in loaf pans.
  5. Bake at 350 degrees for 50-55 minutes or until toothpick in center comes out clean.
  6. Cool for 10 minutes before removing pans from rack.

 Yields 2 Loaves.

 
Marshmallow Pumpkin Dip
Dessert

Ingredients:

  • 1/2 Cup canned pure pumpkin
  • 1/2 Cup Marshmallow Creme
  • 4oz Cream Cheese, softened
  • 1/2 Teaspoon Ground Cinnamon
  • 1/4 Teaspoon Ground Nutmeg
  • 1/8 Teaspoon Ground Cloves

Instructions:

  1.   Whisk all ingredients in small bowl.

  2. Cover and store in refrigerator.

  3. Bring to room temperature before serving.

  

Yields 1 1/4 Cups.
